Homemade Cheeze Itz

I love to eat Cheeze Itz but they are not very good for you, with all the unknown chemicals and preservatives. I made some homemade ones that only have 5 ingredients that you already have in your kitchen! Cheddar cheese, butter, flour, paprika and then some water. First, I put everything into a food processor, or in my case my Ninja blender.


I blended all the ingredients, then after that, I just added about one tablespoon of water at a time to make a dough. I think it took about three tablespoons for me. Then out comes a dough!


After you get a nice dough formed, I used parchment paper but you can also use plastic wrap. You roll it out into a flat dough about 1/8 in thick and then use a pizza cutter to cut what ever size squares you want.


Then you sprinkle them with a little salt and put in the oven on 325 for 25 minutes. My oven is weird, I actually had to cook mine for 10 minutes longer to make them crispy. It just all depends on your oven. They came out like this.


They were surprisingly very good. Shawn and I almost ate all of them last night. They were a little soft and chewy, probably could have cooked even longer but I was afraid of burning them. In the end, this is worth it, if you love Cheeze Itz!

Protein Packed Cheap Breakfast!

I usually make smoothies for breakfast, but I decided to change it up and save some money. My mom makes these so I decided to try my hand at it. They are ham and egg cups I guess you could say. All it is is eggs, thin sliced ham and you can put whatever spices you want. I made some for a whole week and just keep them in the fridge. When you are ready to eat, you can put some cheese on top and put in the microwave for only 30 seconds, no more or the ham will be very crunchy. They are pretty good! Much easier and cheaper than my normal smoothies. Here is a website that has more directions:



Chicken with Spinach and Mozzerella

We eat a lot of chicken in my house. I used to eat a lot of red meat, but that has changed since I have changed my lifestyle. Don’t get me wrong, I still enjoy a steak or burger every now and then. Sadly, I can’t remember the last time I had a burger! Chicken is a better choice because of the protein and is relatively lower in calories. This recipe called for red peppers to top off the chicken. I do not like peppers, so I used tomatoes instead.


This was really good. Shawn even liked it a lot. I followed the recipe mostly besides the red peppers. All in all, it was easy, and really good!

Quinoa Fried Rice

I’m always looking for ways to use quinoa. It is a great alternative to your everyday rice. I love fried rice, especially the kind from the Chinese restaurant. Unfortunately, its not that great for you. Loaded with sodium, and major calories. This recipe doesn’t specify the calorie count, but it was pretty healthy with all the veggies and the quinoa. Luckily I had all the ingredients on hand, I topped it off with some Frank’s Hot Sauce.


This was a pretty good dish! I even saved the leftovers for lunch the next day. I really am not a fan of leftovers, don’t ask why. I just don’t like reheating my food. But, this was pretty good the next day. I just put it in a skillet on the stove on medium heat to heat it up. The hot sauce makes it even better!

No Shampoo

This post isn’t about food, but my blog is about healthy living. I have been hearing all about this “no poo” thing, as in, no shampoo. I was a little scared of it at first, but I will do anything to get my hair to a healthier status. After years of dying it blonde, bleaching it a few times and just bad heat damage, my hair needs some saving. I have gone back to my natural hair color and only get it colored about 3 times a year. Doing this has saved my hair drastically. Anyhow, back to the no shampoo thing. I have no pictures again, sorry! I started doing the baking soda and water as a hair cleanser and a apple cider vinegar and water mixture for the conditioner.

I have been doing this for a week now. I usually only wash my hair 3 times a week because unless you have very oily hair, washing it everyday is bad for it. So far, I’m happy with the results. The apple cider vinegar does really soften your hair, but not as much as regular conditioner. But, its so much better for your hair, the chemicals in shampoo and conditioner can strip your hair of natural oils that it needs! The downside you ask, well the apple cider vinegar smell does stay on your hair until it dries. After it dried, either air dry or blow dry, it was gone. The web page I got this idea from said to be patient, your hair will be oily and feel dirty for the first week or two, until your hair gets used to having its natural oils actually on the hair. This part is true, my roots are oily, but that is a good thing! The post states that just hide your roots for a week or two until your hair gets used to the new process.

In the end, it does make my hair easier to comb through after a shower. The smell, you can mask it by adding in essential oils such as lavender or any other scent. Supposedly this is supposed to help your hair grow as well. My hair refuses to grow, so I’m hoping this will help it. As for the greasy roots, I wear my hair up a lot in the summer anyway, so I can mask them until my hair decides this is a good idea. Try it, but don’t be upset when  your hair is oily for a few days. That is what happens when you are using chemicals to strip your hair of its natural oils!

Healthy low-calorie sloppy Joe’s

There are some nights when I get too excited about a meal and I am too hungry to take pictures for my blog. I tried to make some low-calorie sloppy Joe’s which turned out very good. I used everything the recipe called for except for the extra lean ground beef. My mother-in-law bought me some ground beef but it wasn’t very lean so this is the only thing that I had different. I love this recipe it was very good and it felt healthier than normal sloppy Joe’s. It was so good I wanted to eat all of it but I had to control myself. Sorry again for no pictures, this post seems a little short but I’m actually supposed to be doing some work which I will go back to doing right now!

Candy Flavored Grapes

I have seen this before and have never tried it. You take some grapes and then pour some jello mix over them and it makes them taste like candy! Well, I decided to try it. I do have a sweet tooth so combining fruit with some sugar free jello powder seems wonderful. Let me tell you, yes it is wonderful. I am so happy I found this. It is borderline the best thing ever! It is a healthy snack for the kids, since it tastes like candy. The recipe states 3 cups of grapes and then add 2-3 tablespoons of the jello mix. I added the whole box, I think it only had about 2 tablespoons in it anyway. I had six cups of grapes so I mixed half with strawberry banana flavored jello mix and the other with peach flavored mix. I love the peach one. It tastes so much like candy and can’t even process it, haha.

Unfried Chicken and Cauliflower Mashed Potatoes

I love fried chicken but I cannot remember the last time I actually ate real fried chicken. So, I cam across this recipe for a baked fried chicken. The recipe calls for gluten-free Bisquick, and I did not have that. I just used the regular Heart Healthy Bisquick. It also called for butter to be poured over the chicken, I left this part out to make it a little healthier. This is the before picture:

Anyway, in the recipe it says to use chicken tenders, I used chicken breasts. It did take longer to cook, about 10 minutes longer than the recipe states. When they came out of the oven I was disappointed that the crust I guess you would call it, stuck to the pan and one side of the chicken was crust less.

I also decided to make some mock mashed potatoes. I know, don’t get all disappointed when I say these have no potatoes in them. All it, is,  is cauliflower, butter, garlic and seasonings. You start by putting the cauliflower in a food processor or blender as seen here:

They should come out looking just like mashed potatoes, but they do not taste the same. I had to add more butter and more salt just to make it worth eating. I’ve made the whole pizza crust with cauliflower thing, so I was hoping this would come out great. To make it appetizing, I had to make it as unhealthy as possible, adding more salt and butter.

The chicken was stupendous! It tasted like a chicken wrapped in a biscuit pretty much. It was very good, I enjoyed it even without any kind of sauce. The cauliflower mashed potatoes were not very impressive. They look good in this picture yes, but they didn’t taste as good as they look. I will stick to real mashed potatoes, even though I never eat them.  I have seen so many recipes that use cauliflower for substitutes for things. The pizza crust one, was good, the potatoes, no. I have also made cauliflower fried rice. Of course, it wasn’t rice at all, it was just the cauliflower, and it was pretty good. That is why I am disappointed with the cauliflower potatoes recipe.

Shawn liked it all surprisingly. He even said he like the mashed cauliflower, but I can see right through him sometimes. He tells me he likes it, but really he doesn’t. He did love the chicken though so that was a plus.


Skinny Enchiladas

I love Mexican food, it is one of my favorites, behind Italian. I made some skinny enchiladas last night, but sadly I did not get any pictures taken because I was angry while I was eating. I wasn’t angry at the food, just something that had happened. Anyway, I made half of the recipe because me and Shawn are the only ones here. About a week ago I made my own enchilada sauce so that I know what is going in it and not some mystery ingredients.

I started to make this and then realized I had no chili seasoning. So me, I put in cayenne pepper in it instead. Well, it did not taste like enchilada sauce, so I went to the store to buy the chili seasoning. With the chili seasoning and the cayenne pepper, this was spicy!

Okay and now for the enchiladas. I did add some things and changed some things. The recipe calls for chilies, I did not have any. I used some jalapenos instead. I put them in the food processor to chop them up to the shape of chopped chilies. I also added some sliced avocado into the filling. Everything else in the recipe, I used. My tortillas were the low fat kind and they tend to fall apart easily. I got them rolled up the best I could and stuck them in the oven. At the end of the recipe it does not say to pour the remaining sauce on top, but yes, do that.

I loved it of course. Shawn thought it was a little spicy so he ended up drinking two glasses of milk along with them. My take on spicy foods is, spice revs up your metabolism, so for me, its all good. If you don’t want it to be so spicy, don’t use the jalapenos or the cayenne pepper in the sauce. Of course, these will not taste like the enchiladas from your favorite Mexican restaurant, they are made to be a lot less calories but they still taste very good!



Almighty Spaghetti Squash!

I love spaghetti squash, my husband, not so much. I make it anyway and try to mask the taste for him. I found this recipe for Spaghetti Squash with a creamy avocado sauce. Avocado is another one of my favorite foods, it provides you with the healthy fats that your body needs. Along with the spaghetti squash, this makes for a very healthy meal. Spaghetti squash alone has about 40 calories per cup so substitute that for regular noodles and you are saving a tremendous amount of calories. Not to mention the health benefits of the squash. Cooking the spaghetti squash is easy. What I do is pre-heat the oven to 375 degrees, cut the squash in half, scoop out all the seeds and fibers (just like a pumpkin) then brush some olive oil, and salt over it. Place in the oven cut side down for usually 35-40 minutes. It really just depends on the size of the squash. I tend to get large ones so mine takes the full 40 minutes. When it is done, take a fork and scrape the inside and it should come out looking like noodles!


The creamy avocado sauce makes this delish! I loved it, but my husband blamed a large Subway sandwich for lunch as his reason to not eat much. I know he is not a fan, but that won’t stop me from making it! He can be unhealthy on his time, but on my time, he will eat healthy. Here is what my avocado sauce turned out to look like.


All I did was use my food processor to make all the ingredients into this yummy creamy sauce! My finished dish looked like this:


In the end, I loved this! It was simply amazing. I even felt a little healthier after eating it. I had a lot of leftover squash because my husband hardly ate any. It freezes well in an airtight container.
